Vegan Chocolate Porridge

Packed with skin boosting antioxidants, vitamins and minerals, this tasty oat recipe is definitely one of my favourites!

Vegan Chocolate Porridge

  • 50 Grams of jumbo oats
  • 200ml water
  • 1 tsp Maple syrup
  • 1 heaped teaspoon Cocoa powder
  • 1 small pinch of Salt
  • 1 heaped tbsp Toasted desiccated coconut
  • Blueberries/Raspberries
  • 1/2 Banana
  • 1 tsp Chia seeds

Toast the desiccated coconut in a dry pan over medium heat stirring constantly till it has a golden brown colour and put aside.

Add the oats, water, maple syrup,salt and cocoa powder to a small saucepan over a medium heat and simmer whilst stirring often to avoid burning the oats for approx 8-15 minutes. Cooking time will differ according to type of oats so you might need to add a little bit more fluid to the pot. Personally I like to cook porridge that little bit longer till it has a creamy consistency and always need to add a bit more fluid as I go along.

Pour the cooked porridge into a bowl and assemble with the coconut, fruit and chia seeds. The options are endless of what you can add to this delicious breakfast!

Cocoa has so many benefits, besides being a mood enhancer it also helps to lower blood pressure and is packed full of anti-oxidants. The combination of oats , cocoa and coconut is a slow burning meal that will keep you going and help to reduce those sweet cravings we all experience!
